Cabernet Sauvignon Poached Pears |
Ingredients:
2 cups Cabernet Sauvignon
1/4 cup organic sugar
1/2 cup orange juice (squeezed from a fresh orange)
3 strips orange peel strips
1 cinnamon stick
2-3 whole cloves
4 firm, but ripe large pears
4 Tablespoons creme fraiche or mascarpone cheese (optional)
Directions:
1: In a medium sauce pan that is large enough to hold all pears, combine Cabernet Sauvignon, sugar, orange juice, orange peel strips, cinnamon stick and cloves over medium heat.
Stir until sugar is completely dissolved. Reduce the heat when boiled and simmer for a few minutes.
2: While the Cabernet Sauvignon liquid is simmering, peel the pears leaving the stem intact.
3: Slice off the bottom of pears about 1/8 inch to create a flat base.
4: Gently add the pears in the liquid laying them on their sides, and simmer for 20 minutes. Turn the pears every five minutes, so they become saturated on all sides. In 20 minutes, pears should be cooked, but still firm.
5: Remove the sauce pan from the heat and leave to cool. When it's room temperature, cover the sauce pan and chill in the fridge overnight or up for 24 hours. Turn the pears occasionally for an even color on all sides.
6: Remove the pears from the sauce pan gently, and place them on the serving plate. Leave them to room temperature.
Boil the Cabernet Sauvignon liquid about 10-15 minutes, until the liquid becomes thicker and syrupy. Let the syrup come to room temperature.
7: Spoon some syrup and drizzle over the room temperature pears. Serve with creme fraiche or mascarpone cheese if desired.
